Honey Rosemary Old Fashioned

We love a good old fashioned and like to experiment with different variations. One of the results from playing around is the honey rosemary old fashioned.

Honey Rosemary Old Fashioned

It follows the classic recipe combining bitters, sugar or simple syrup, and whiskey. What sets this one apart is the simple syrup. It is a rosemary-infused honey syrup. No need to worry; it is easy to make. The instruction is a little further down.

Like most cocktails, we prefer our old fashioned with a punch using a large pour. Also, a high proof whiskey helps pack a punch. For this particular whiskey drink, we use Ironroot Republics Hubris. It is a 100% corn whiskey clocking in at 117.8 proof.

The whiskey is bold and shines through the honey and rosemary. If you want the honey flavors to be the star, look at using Treaty Oak Day Drinker or Milam & Greeneā€™s bourbon.

There is no useful shortcut to making the honey rosemary syrup, so plan to make a few of these, or it can make a fabulous glaze. It is equal parts of honey and water. I have found a 1/2 cup of each works great. Pour honey and water into a small saucepan and stir to dissolve the honey. Place the rosemary spring into the honey water. Place the saucepan over high and heat until the liquid comes to a boil. Remove from heat, and set aside to cool for 10 minutes. Once cooled, remove the rosemary sprig. The syrup will keep in the fridge for about a week.
