Beerhive
Found on highballdrinkcards.tumbler, the Beerhive is your poolside whiskey cocktail. This highball is unusual but light and refreshing.
The beerhive cocktail
This cocktail mixes bourbon, lemon juice, honey syrup, and beer. I chose to use Tahwahkaro 4-grain bourbon and Pabst Blue Ribbon. The recipe I found uses pale ale, but I am using what we have in the beer fridge. It will taste different since most lagers (that is what PBR is) don’t use as many hops as the pale ales. Tahwahkaro 4-grain bourbon uses corn, rye, wheat, and barley. I don’t have the exact mashbill but know that it is at least 51% corn. Using both rye and wheat creates a bourbon with some spice on the front that mellows quickly. You can learn more about the distillery from our whiskey conversation series.
To make the honey syrup mix equal parts honey and boiling water. Stir until the honey is well mixed and liquid. Refrigerate after using. My experience is it will last about a week. I generally only make what I need for that day.
Use our beerhive recipe as a guide to adjust for your tastes. For example, I do not care for lots of lemon flavor, so I am decreasing the amount to .5 oz vs. the .75oz. If you like the sour notes, add more. I am increasing the amount of bourbon, but if it is two sharp lower the amount.
Ingredients
1.75 oz bourbon
.5 oz lemon juice
.75 oz honey syrup
Pale ale or other beer
Lemon wedge to garnish (optional)
How to make the beerhive
Combine bourbon, lemon juice, and honey syrup in a cocktail shaker with ice. Shake or stir to chill. Strain into a chilled glass with ice. Fill the rest of the glass with the beer. Garnish with a lemon wedge if you desire.
